Harvesting seeds happens when you save seeds from your existing plant! Seed saving allows you to save plants and hybrids of plants that have been saved for generations. Growing plants from existing seeds also allow for those plants themselves to be better adapted to your garden since they have been predisposed to your garden's conditions beforehand.
Saving seeds also saves you money, since you are preserving seeds instead of buying new seeds.
